Maca Chocolate Truffle

I ate these chocolate truffles for the first time on the spanish isle Palma de Mallorca. I grew up there when I was little and my mother lives there nowadays. I always make sure to go to Ziva to get their chocolate truffles. With this recipe I am trying to make them. They are not the same but just as delicious in my opinion. They are vegan, glutenfree and sugarfree - sweetened with dates only. Maca is energizing and a great combination with chocolate.

I presented this recipe on Yoga Girl's channel on OneOEight. It was one of the most popular recipes of mine. 

These truffles are easy to make. A food processor will be helpful.

ingredients

for the paste

  • 1 cup of dates (soaked)

  • 2 cups of almond/walnut butter (or any nut butter you like, ground nuts work as well)

  • 1/2 cup of coconut oil

  • 1/2 cup cacao powder

  • 1 spoon of maca powder

  • a splash of vanilla

  • little salt

 

for the cover

  • 1/2 cup cacao butter

  • 1/3 cup cacao powder

  • a splash of nut milk

  • 1-2 cups cacao nibs for rolling

directions

  1. Soak the dates for 10 min in hot water. Remove most of the water and blend until smooth - a tiny little bit of water is ok because it will make it easier on your mixer.

  2. Add the remaining ingredients for the paste to the dates and blend. If you are using a Vitamix blend on high speed for short periods or the mixer might break. Form into bite size balls.

  3. Warm the cacao butter carefully in a water bath. When melted, mix in the cacao powder. Be careful to not overheat the cacao butter. Once smooth, mix in a splash of nut milk and mix quickly with a whisk. This will make the chocolate cover creamier.

  4. Now roll the balls in the chocolate cover and then immediately in the cacao nibs. Once complete, refrigerate and enjoy when they are cold.
